One of our biggest holes in security is spillage,’ according to Henry Leace, Founder and Managing Partner at Mojitobar. In an attempt to tackle this problem, the team at Mojitobar decided to supplement their monthly inventory audit with an outsourced weekly control.
As accurate (and as expensive!) as this inventory was, Henry was unable to pinpoint the exact causes of the spillage. He still didn’t know what was happening on the floor on a daily basis.
With over $10,000 per month spent on inventory audits, Henry needed to find a solution that would detect the root of the issue so that he could fix it, and start to decrease their losses.

Henry decided to try out Glimpse - a software offering AI-powered technology that detects and matches drinks served across the bar with orders entered into the POS system. This would allow Henry to zero-in on areas of loss and rectify the issue.
Glimpse cameras were installed in all locations, positioned so that they could clearly see the bar area. Then came the POS system integration which would allow the Glimpse software to cross-reference all movement on the bar with sales data.
Another one of Glimpse’s features of interest to Henry and his team was the ability to set up a ‘maximum serving time’ - the time that it should take for the customer to receive their drink after order. Glimpse categorizes any transaction that takes longer than the set time as ‘At Risk’, as the customer could leave the bar without paying or disappointed with the slow service, thus reducing the chances that they would return in the future.

Henry was impressed by the data he received from Glimpse. With the reports delivered via text and email, he was able to drill down to specific times and bartenders and use the data as a training tool to improve team performance.

Within the first month, Henry noticed considerable changes in his bottom line across both locations. First of all, there was a substantial decrease in true revenue loss from a high of $85,000 a month to less than $500. Mojitobar also experienced a reduction in lost sales from 34% to just below 4%. There was also an astounding increase of 26% in the speed and accuracy of drink reporting and overall service. And if these figures weren’t enough, the increase in team efficiency has led to more revenue as tables are being turned over much more quickly than before.
