Sticking to SOPs and Why That Is Important

It is always daunting when you first receive the employee manual and realize that it has more pages than most books you have read, filled with pages of Standard Operating Procedures (SOPs) that are vital to memorize. Worse, you worry about what will happen if you don’t remember what was stated on page 187 and the difference between that SOP versus the SOP on page 192, which both deal with heating items.

Is there a reason for all of this? Absolutely, and it’s important to explain that to team members as they grow and learn in new and challenging environments. Industries generate SOPs to ensure compliance for a variety of reasons, ranging from local, state, and national health codes to customer safety in the event of an emergency. Yes, it is a lot to take in at once, and changing one can be confusing when you have been following it for years, but these rules have passed all necessary tests to ensure the business is able to provide a comfortable and safe environment for its guests. Fire in the kitchen? There’s an SOP for that. They want the check split 8 ways? Unfortunately, there’s an SOP for that too.

There are also SOPs regarding entering orders and serving drinks within a certain time period. Yes, all restaurants and bars have a time that they want to see drinks ready to be served by. Usually managers will want drinks to be ready within 3-4 minutes of the order being placed; however, if you order 14 Appletinis coupled with a few Old Fashioneds, it’s going to be a bit longer.
